ALKALINE BROCCOLI GINGER SOUP
INGREDIENTS
- 1 red onion
- 1 garlic clove
- 1 broccoli with stem
- 1 tablespoon olive oil
- 500 ml vegetable stock
- 1 handful of rocket
- 1 teaspoon medium hot mustard
- 100 ml coconut milk + more for garnish
- 1 tsp curry powder
- 30ml Ginger Shot Classic
- Almonds sliced
- Pepper
PREPARATION
To make this delicious broccoli and ginger soup, first finely chop the onion and garlic. Cut the broccoli with the stalk into small pieces. Add olive oil to a pan and fry the onions until translucent. Add the garlic and broccoli and sauté for approx. 3 minutes. Deglaze with vegetable stock and simmer for 5 minutes until the broccoli is soft. Mustard, rocket, Ginger Shot ClassicAdd the coconut milk and curry powder to the pan. Puree the soup with a blender or hand blender until it has a creamy consistency. To serve, garnish the soup with a little more coconut milk, fresh rocket, sliced almonds and a pinch of pepper. Enjoy your meal!
