HERBAL WAFFLES WITH GINGER

TOPPING

INGREDIENTS

  • 30 ml Ginger Shot Classic
  • 150 g fresh spinach leaves
  • 1 clove of garlic, peeled
  • 200 g cherry tomatoes
  • Small handful of almonds
  • 200 g ricotta or granular cream cheese
  • 1 organic lemon
  • Olive oil
  • Balsamic vinegar
  • Maple syrup
  • Salt
  • Pepper

PREPARATION

Preheat the oven to 200 degrees fan. Place the cherry tomatoes in a small baking dish or on a baking tray, season with olive oil, maple syrup, balsamic vinegar, salt and pepper. Roast the tomatoes for approx. 25 minutes until they burst open and are lightly browned. Heat a little olive oil in a pan and add the finely chopped garlic clove. Toss the fresh spinach in the hot pan until it collapses slightly. Season the spinach with salt and pepper and set aside. Place the ricotta in a bowl and season with lemon juice, a little lemon zest, olive oil, our Ginger Shot Classic, salt and pepper. Roughly chop the almonds and toast briefly in a pan.

INGREDIENTS

  • 30 ml Ginger Shot Classic
  • 50 g spinach
  • A handful of herbs, e.g. fresh parsley or basil
  • 2 eggs
  • 125 ml milk (or plant-based milk)
  • 125 g spelt flour 630 
  • 1 tsp baking powder
  • Pinch of salt
  • Butter or neutral oil for frying

PREPARATION

Place the spinach in a blender with the Ginger Shot Classic and a handful of fresh herbs (e.g. parsley or basil) and blend until smooth. Whisk the eggs in a large bowl and add the milk (or plant milk). Add the spinach, ginger and herb mixture and mix well. In another bowl, mix the spelt flour, baking powder and a pinch of salt. Add the dry ingredients to the wet ingredients and mix to form a smooth batter. Heat some butter or neutral oil in a waffle iron. Pour a portion of batter into the waffle iron and bake the waffles until golden brown and crispy.

ARRANGEMENTS

To serve, spread the ricotta cream on a waffle as desired, top with the spinach and grilled tomatoes. Garnish with the chopped almonds and season with a little olive oil, salt and pepper. Enjoy your meal!
