SHRIMP SALAD WITH GINGER-POMEGRANATE DRESSING

GARNELEN
INGREDIENTS
- 300 g white tiger prawns, defrosted
- Juice of 1/2 lemon
- 1/2 tbsp olive oil
- 1-2 cloves of garlic, pressed
- Salt, colored pepper
- Parsley, fresh & finely chopped
PREPARATION
Mix the prawns in a bowl with the lemon juice, olive oil, garlic, salt and pepper. Fry in a non-stick pan and then finish with parsley.
SALAD
INGREDIENTS
- Picking lettuce mix (2 hands full)
- Lettuce (6-7 leaves)
- 1/2 cucumber
- 8 mini panicles of tomatoes
- 1/2 avocado
- 2 tbsp pomegranate seeds
PREPARATION
Wash and dry the lettuce, tomatoes and cucumber. Tear the lettuce into bite-sized pieces and dice the cucumber, tomatoes and avocado. Peel the pomegranate seeds (or buy them already peeled).
DRESSING
INGREDIENTS
- 60ml Ginger Shot Pomegranate
- 2 tbsp dark balsamic vinegar
- 1 tablespoon olive oil
- 1-2 tsp fresh lemon juice
- 1 teaspoon medium hot mustard
- salad herbs, salt, pepper, chili
PREPARATION
Stir together the dressing from the above ingredients. Our Ginger shot pomegranate gives the dressing a perfect balance of fruity sweetness and slight spiciness, which complements the flavors of the salad and prawns wonderfully.
ARRANGEMENTS
When the prawns are ready, mix the salad ingredients with the dressing. Garnish with avocado, pomegranate seeds and the prawns and enjoy!
