SHRIMP SALAD WITH POMEGRANATE AND GINGER DRESSING

INGREDIENTS AND PREPARATION

1. prepare the prawns:

  • 300 g white tiger prawns, defrosted
  • Juice of 1/2 lemon
  • 1/2 tbsp olive oil
  • 1-2 cloves of garlic, pressed
  • Salt, colored pepper
  • Parsley, fresh & finely chopped

Mix the prawns in a bowl with the lemon juice, olive oil, garlic, salt and pepper. Fry in a non-stick pan and then finish with parsley.

2. prepare the salad:

  • Picking lettuce mix (2 hands full)
  • Lettuce (6-7 leaves)
  • 1/2 cucumber
  • 8 mini panicles of tomatoes
  • 1/2 avocado
  • 2 tbsp pomegranate seeds

Wash and dry the lettuce, tomatoes and cucumber. Tear the lettuce into bite-sized pieces and dice the cucumber, tomatoes and avocado. Peel the pomegranate seeds (or buy them already peeled).

3. prepare the dressing:

  • 60mlGinger Shot Pomegranate
  • 2 tbsp dark balsamic vinegar
  • 1 tablespoon olive oil
  • 1-2 tsp fresh lemon juice
  • 1 teaspoon medium hot mustard
  • salad herbs, salt, pepper, chili

Stir together the dressing from the ingredients listed above. Ourginger shot pomegranate gives the dressing a perfect balance of fruity sweetness and slight spiciness, which complements the flavors of the salad and prawns wonderfully.

4. dressing:

When the prawns are ready, mix the salad ingredients with the dressing. Garnish with avocado, pomegranate seeds and the prawns and enjoy!
