SWEET POTATOES
INGREDIENTS
- 4 medium-sized sweet potatoes
PREPARATION
Wash the sweet potatoes thoroughly and prick them all over several times with a fork. Place in a baking dish or on a baking tray and bake in a preheated oven at 200 °C for approx. 45 minutes to 1 hour, depending on the size of the potatoes. They are ready when they are soft when pierced.
BLACK BEAN MIX
INGREDIENTS
- 1 tin of black beans
- 200 g cherry tomatoes
- 200 g cooked corn kernels
- 1/2 red onion
- 1 small bunch of coriander
- 1 garlic clove
- Juice of 1/2 a lime
- 30ML Ginger Shot Classic
- Salt & pepper
PREPARATION
Halve the cherry tomatoes, finely chop the coriander and crush the garlic clove. Finely slice the red onion. Mix all the ingredients together in a bowl, season with lime juice, ginger shot, salt and pepper.
GUACAMOLE
INGREDIENTS
- 1 ripe avocado
- Juice of 1/2 a lime
- Salt
PREPARATION
Finely mash the avocado in a bowl with a fork. Season with lime juice and salt until the desired consistency is achieved.
ARRANGEMENTS
Remove the baked sweet potatoes from the oven, leave to cool briefly and cut in half. Lightly mash the inside with a fork. Garnish each potato half with the bean mix, guacamole and optional sour cream. Decorate with fresh chilli and spring onion rings if desired.
