BERRY AND CINNAMON LAYERED DESSERT
This deliciously creamy berry and cinnamon layered dessert is the perfect recipe for cold days. The combination of fruity berry purée, aromatic berry-cinnamon ginger shot, crunchy speculoos crumbs, and a creamy yogurt-mascarpone layer makes this dessert the highlight of any winter or Christmas celebration. It's quick to make, guaranteed to succeed, and looks beautifully layered—ideal for guests or as a quick everyday dessert!
- 500 g plain yogurt
- 250 g mascarpone
- Approximately 15 spiced speculoos cookies, crumbled
- 300 g mixed berries (frozen)
- Optional: 1 tablespoon agave syrup or honey
- 60 ml ginger shot berry-cinnamon

For the berries, first place the frozen fruit in a saucepan with a little agave syrup and slowly reduce over medium heat. Once soft, purée everything and then stir in the berry-cinnamon-ginger shot.
(Alternatively, you can gently heat the berries in a Thermomix and then purée them.)
While the mixture cools slightly, stir the plain yogurt and mascarpone in a bowl until smooth and creamy. Then prepare several dessert glasses and layer the yogurt-mascarpone cream, warm berry purée, and crunchy speculoos crumbs alternately. Simply repeat the layers until the glasses are nicely filled.
Finally, you can enjoy the dessert straight away or chill it for around 30 minutes to allow the flavors to blend perfectly. For an extra wintery finish, sprinkle some cinnamon on top or use a few fresh berries as decoration.
