
FLUFFY PANCAKES WITH GINGER SHOT BERRY-CINNAMON

INGREDIENTS
- 250 g wheat flour type 405 (alternatively spelt flour type 630)
- 2-3 tbsp maple syrup (or other sweetener)
- 2 tsp baking powder
- 2 eggs
- 30 ml ginger shot berry-cinnamon
- 200 ml milk (or milk alternative)
PREPARATION
Mix all the ingredients for the pancakes in a stand mixer to form a smooth, creamy batter. Heat some butter in a pan and fry the pancakes over a medium heat until they are golden brown on both sides and nice and fluffy.

TOPPING
INGREDIENTS
- Seeds from a pomegranate
- Yoghurt to taste
- Some poppy seeds
- 1 tbsp ginger shot berry-cinnamon
PREPARATION
Top the pancakes with yogurt, pomegranate and some poppy seeds, for example, and drizzle a little of our ginger shot berry-cinnamon on top.
